Grape

Aleatico is a rare planted wine variety traditionally found in Elba and southern Tuscany in Italy.

Vineyard

Situated in NSW the vineyard is over 500m above sea level.

Harvest

Harvest begins once the fruit has reached its ripeness. Our aim is to allow the lychee and rose Turkish Delight flavours to reach their maximum intensity and harvest before losing any freshness.

Fermentation

After harvest, the grapes are de-stemmed, crushed and pressed. Fermentation takes place at a temperature of 12-15 degrees Celsius. A cooler ferment helps to preserve the crisp aromatic characters of Aleatico and helps hold a tight, crisp palate.

Ageing

Once fermentation has been completed the wine is matured in stainless. After this the wine is pressurised.

Tasting notes

Vibrant pink in colour with lifted muscat aromas including Turkish Delight with hints of rose water and gentle spicy notes. With ripe lychee fruit characters driving the wine’s medium weight palate all balanced by a crisp and fresh finish.

Cellaring

Aleatico is a highly aromatic variety and is made to enjoy now whilst the fruit characters are fresh and vibrant.

Food pairing

We recommend fresh figs, chopped in half and stuffed with Gorgonzola cheese, then wrapped with prosciutto and lightly browned in the oven. It also pairs wonderfully with salty meats such as salt pork, prosciutto and salamis.
