Grape
A blend of five different varieties crafted and blended. Grape varieties change depending on the season and the characters desired.
Vineyard
We carefully select premium vineyards to match each variety to create the best of the best. Our selected vineyards range from Hill Tops, to Canberra and the Southern Highlands.
Harvest
Harvest begins March to April once the fruit has reached its desired ripeness. Our aim is to create a final wine with layers of delicate complexity and a long, lingering finish.
Fermentation
After harvest, the grapes are de-stemmed and loaded as whole berries into the tanks. Fermentation takes place at a temperature of 28-30 degrees Celsius. The slightly warmer ferment allows the rich tannins to be extracted from the berries and helps develop the savoury tar-like flavours in the wine.
Ageing
Once fermentation has been completed, we mature the wines in French oak for 12-18 months. During this process the barrels are topped and regularly undergo batonage to create a soft, creamy mid-palate.
Tasting notes
Soft, fluffy tannins drift you through the palate past interesting flavours of vanilla, chocolate, plum, spice, strawberry and cherries before you’re left with long, lingering raspberry finish. Designed to be structured and complex enough to make your mind drift into the earth vineyard soils, but at the same time soft, rich and plump the perfect comfort companion.
Cellaring
We hold back Lost Flock so that it’s drinking great when we finally release it. Having said that, it still has many years under its belt and would happily sit in the cellar for five years plus.
Food pairing
The deep rich chocolate and raspberry finish is a perfect match for a big beef stew or lightly barbequed kangaroo.
