Harvest
Some people in Griffith call us crazy as we are harvesting weeks before everyone else, but high yields and early harvest helps us create the fresh citrus character we are chasing in the unhoofed sparkling white.
Fermentation
Clean, slow and cool is the trick for both the primary and the secondary fermentation of our Unhoofed sparkling.
Ageing
Aged for a short time on lees in tank as part of Chamat processing methods to help retain maximum fruit freshness
Tasting notes
A lively, fruit-driven sparkling that opens with crisp citrus, green apple, and white-nectarine aromatics. The palate is bright and refreshing, carrying flavours of lemon zest, nashi pear, and apple skin, all supported by fine, energetic bubbles. Beneath the fresh fruit sits a subtle layer of brioche and delicate yeast complexity, adding finesse without overshadowing the wine’s clean, vibrant style. The finish is long, zesty, and refreshingly dry.

Our Unhoofed Sparkling Chardonnay is about fresh clean fruit with hints of brioche so its made to drink in the next 1-3 years
