Our starting point for regeneration.
The Unhoofed Series exists to support vineyards at the beginning of their regenerative journey. These wines come from blocks and styles that are still evolving—trial areas, early conversions, and innovative techniques finding their feet. By giving these developing vineyards and wine styles a commercial home, we’re able to fund and accelerate the shift away from industrial agriculture and towards healthier soils, livestock integration, and low-impact winemaking. Without Unhoofed, many of these vineyards or emerging styles would never have the chance to grow into fully sustainable expressions.

sparkling chardonnay
A lively, fruit-driven sparkling that opens with crisp citrus, green apple, and white-nectarine aromatics. The palate is bright and refreshing, carrying flavours of lemon zest, nashi pear, and apple skin, all supported by fine, energetic bubbles. Beneath the fresh fruit sits a subtle layer of brioche and delicate yeast complexity, adding finesse without overshadowing the wine’s clean, vibrant style. The finish is long, zesty, and refreshingly dry.
Nebbiolo
Nebbiolo is an Italian variety associated with the Piedmont region. Deep, rich and dark, with aromas of licorice and black earth, it is lifted by a vibrant red rose character. The deep earthy tannins follow on the palate and open up to a delicate rose finish.
